Description of restaurant: A canopied side-walk trattoria, inside DeVargas Center shopping mall, crisp black & white tile decor. Seating arranged along a bold urban mural. Comfortable, immaculate, unpretentious.
Signature dishes:
Three SEASONAL dishes offered in August, September and October only, or as long as the necessary produce items last are:
Pizza Margherita - although a common and simple Italian dish, what sets ours apart and has our customers waiting with "bated taste buds" every summer is that we use ONLY locally-grown fully vine-ripened tomatoes and many of them heritage seed varieties -- all of them organically grown. Additional ingredients are fresh basil and fresh mozzarella. This is TRULY NOT TO BE MISSED!
Salad Caprese - also made with the local tomatoes, fiore di latte (fresh mozzarella) and fresh basil.
Fiesta Pizza - again using local and seasonal ingredients (Hatch green chile), Roland created this very New Mexican pizza to honor the fiesta events occurring in Santa Fe in late August and early September.
Other signature dishes are:
Rodeo Pizza - created to celebrate Rodeo Days in Santa Fe. It gathered so many regular fans, that it became a permanent menu item.
Pizza Giovanni - probably our best seller, made with mild creamy goat cheese, roasted red peppers, fresh-roasted garlic and fresh oregano. A really delicious combination.
Health appeal of our food:
We habitually choose vegetables, meats and other ingredients that are of the highest quality with the least possible additives and most often with NO additives. Our pizza sauces and tomato sauces are made with high quality vine-ripened tomatoes (as opposed to an economical concentrated tomato paste). Our mozzarella is a high quality low fat real mozzarella. Additionally we offer cheese-less or soy cheese pizzas as an alternative to our clients. Almost all of our menu items are made on premises including subs, breadsticks, foccaccia, desserts, soups, meatballs, pizza dough (of course!).
Even our coffee supplier is chosen to meet two criteria: excellence of product and , when possible, LOCAL production.

A bit about Roland and Sheila and how and why Pizza Etc.
They moved to Santa Fe in 1990 prompted by the lure of a "slower and gentler" way of life (ha!). After the usual income and career adjustments (Roland previously executive chef of three noteworthy Toronto restaurants, Sheila a choreographer and Broadway dancer), they worked for various employers in Santa Fe until finding Pizza Etc. up for sale in 1995. They "mortgaged the farm" and leapt at the opportunity with never a regret. It's a fun, active and involving business.
